When students leave school, most go through a similar list of activities: sports, clubs, homework, work, or hanging out with friends. What our teachers do, on the other hand, is more of a mystery. While many likely spend time grading papers or being with family, some have more unexpected pursuits.  

Mari O’Rourke, a math teacher here at Masuk, is one of those teachers with a surprising side hustle. Beyond the walls of her classroom, she co-owns Ayla’s Bagels, a popular bagel shop in Woodbury.  

“My husband and I bought it around two and a half years ago because we wanted to have a place that we could eat,” O’Rourke explained. As vegans, the two found it challenging to dine out, which inspired them to create a space that catered to both vegan and non-vegan customers. “We added a lot of vegan options,” O’Rourke said. “It’s been a lot of work, but a lot of fun.”  

Running Ayla’s Bagels is no small feat for O’Rourke, who balances her teaching responsibilities with the demands of business ownership. “A lot of days, I go there before I come to school, or leave here and go there until nine o’clock at night sometimes.” She described, “It’s like another full-time job.”

Despite the challenges, O’Rourke takes pride in the improvements she and her husband have made to the shop. “We upgraded a lot and added a lot of lattes and coffees,” she said. The menu holds something for everyone: traditional options like bacon egg and cheese sandwiches, as well as innovative vegan alternatives: “You can get your traditional bacon egg and cheese, but you can also get a vegan version.” Their popular menu items span from the Grilled Chicken Deluxe to the Vegan Trifecta.  

Ayla’s Bagels isn’t just a new venture for O’Rourke; it’s a continuation of a legacy. The shop has been a staple in Woodbury for over 25 years and has always been woman-owned. Its name, Ayla, is derived from the protagonist of “The Clan of the Cave Bear”, a novel and film that inspired the original owner. 

O’Rourke’s passion for her shop is evident, especially when discussing its standout offerings. “I would definitely say any of our specialty lattes are outstanding,” she said. The shop also features an array of vegan pastries, making it a unique destination for the community.  

For O’Rourke, Ayla’s Bagels is more than just a business. It’s a place where she and her husband can bring their vision to life while offering something meaningful to the community. Whether serving a warm cup of coffee in the early hours of the morning or crafting a perfect sandwich after school, O’Rourke is proof that teachers can inspire not just in the classroom but also through their entrepreneurial pursuits.
